Ingredients:
1 cup dried lentils
1 onion, diced
2 carrots, diced
3 cloves of garlic, minced
4 cups vegetable broth
1 tsp cumin
1 tsp paprika
Salt and pepper to taste
1/2 cup coconut milk
Fresh parsley for garnish
Instructions:
In a large pot, sauté the onion and carrots in some oil until they begin to soften, about 5 minutes. Add the garlic and cook for another minute.
Add in the lentils, vegetable broth, cumin, paprika, salt, and pepper. Bring to a boil, then reduce heat and simmer for about 30 minutes, or until the lentils are tender.
